Meatloaf with Celery

Just trying to cook some stuff from the fridge. Turns out well!
Cooking Instructions

Mix all ingredients except tomato ketchup. I used my hand to combine them well.

If it is too watery, add some breadcrumbs. If it is too solid, add another egg or a bit of milk. Add 2 tbsp of ketchup to the mixture.

Put inside a well-greased heatproof dish and bake 175 Celcius degrees for about 40 minutes.

While still hot, spread 4 tbsp of ketchup on top of the meatloaf.

My kids love when I make this and just can't get enough. I took my mom's recipe and jazzed it up a lot. I live in a humid environment so sometimes I need to add more or less breadcrumbs depending on the weather. I recommend using a serrated knife to cut it when finished, it helps to keep the bacon attached to the slices.

Have to admit I never cooked much until lately and it's trial and error for me. I only used a 1/2 c. ketchup and 1/2 c. water. Turned out OK but prob could have used more ketchup. So for this recipe here I increased the ketchup.

This recipe is probably one of the easiest recipes out there, but it is so, so tasty. Really easy to customize it by adding more spices to get it exactly how you like it. Using 1 tsp onion powder instead of chopped onion also helps if you're not the biggest fan of the chunks.
