Ingredients

  1. 1 bunchKale, torn or cut into bite-size pieces
  2. 1 smallButternut Squash, medium dice
  3. 1 mediumOnion, sliced thin
  4. 1 tspOregano
  5. 1/2 tspCumin
  6. 1 tspCayenne Pepper
  7. 1Salt & Pepper
  8. 2 tbspApple cider vinegar
  9. 2 tbspLime juice
  10. 2 tbspOlive oil
  11. 2 tbspOlive oil

Cooking Instructions

    Preheat oven to 350°F

    Toss butternut squash in first measure of olive oil, place on a baking sheet, and place on center rack of heated oven. Cook for 25-35 minutes, or until tender.

    Place onion with second measure of olive oil in a large skillet over medium heat with salt and pepper and cook until well caramelized. (About 15 minutes)

    Once onions are caramelized, add the kale and spices. Cook until the kale wilts slightly.

    Deglaze the pan with vinegar and lime juice then gently fold in the roasted squash.

    Serve immediately.
