This onion soup was excellent. I made some baguettes and cut one into slices to use it on top of the soup and cover them with gruyere cheese. I ended up melting the cheese in the oven. Of course, you can use your favorite cheese.

My hubby loves this soup. I wanted to make a restaurant-style soup at home easily. It tastes better after you let it rest, so I always make a lot of it!Heat and cool it down several times. Letting the soup cool down during the cooking process gives the flavors more depth.Make sure to let the bread and cheese brown in the oven.The soup tastes better with beef fat. also a cool idea is to fry an onion ring instead of bread and melt the cheese on top of it

I love the sweetness of onions.Cut onions against the grain to break the fiber. If you don't do this, the onion will not have a soft texture.It burns easily when you sauté with butter, so please stir constantly.If you put bread and cheese on top of the soup and brown it in the oven, it will turn into onion gratin soup!
