Whipped this up with my zucchini risotto for the hubs' and my dinner tonight. Added a nice salad on the side with mine as well.

Easy Parmesan Crusted Chicken for 2

Whipped this up with my zucchini risotto for the hubs' and my dinner tonight. Added a nice salad on the side with mine as well.

Ingredients

2 servings
  1. 2 (8 oz)boneless skinless chicken breasts
  2. 4 tbsmayonnaise
  3. 2 tbsgrated parmesan cheese
  4. 1/2 tspdried basil
  5. 1/2 tspdried oregano
  6. 1/2 tspdried parsley
  7. 1/2 tspgarlic powder
  8. 1/4 tsponion powder
  9. 2 tbsPanko breadcrumbs
  10. to tastesalt and pepper

Cooking Instructions

  1. 1

    Preheat oven to 425°F. Lightly salt and pepper chicken breasts on all sides. Place on small baking sheet.

    In a small bowl mix together all other ingredients EXCEPT the panko.

  3. 3

    Spread half of mayonnaise mixture evenly over the top of each chicken breast. Sprinkle 1 tbs Panko over each breast. Gently press into mayo layer.

    Place in oven. Bake 20 minutes or until tops are golden and internal temp is 170°F. Remove from oven. Let rest 5 minutes. Slice to serve. Enjoy.
