Spinach & Squash Risotto Using Left Over Squash Soup

I had spinach and leftover soup... Wanted to use both ingredients, and the result came out amazing!

Boil the broth on a pot.

One another pot, sauté the chopped onion (optional) with the olive oil.

Add the rice and "sauté" the rice for 1 minute

Add the wine and stir well

Add more broth as soon as the risotto starts to dry. Keep doing this. Stir constantly!

After 10 minutes add the spinach

At the end of the cooking (usually 30 minutes) add the left over squash soup.

Mix well

When the risotto is done add the butter (optional) and the cheese.

Serve and enjoy!

We've been bringing home summer squash by the pound in our local CSA share, and this is a simple, delicious way to use up a lot of it all at once. I use gochujang-- Korean red pepper paste-- to spice this soup, but if you don't have it on hand a squeeze of lemon juice, some salt and pepper, or a dash of tobasco will do just fine. My company holds a weekly department meeting every Wednesday, and at those meetings there's usually a non-business related roundtable to break the ice. Today's starter topic was favourite foods, which is always a guaranteed hit. Anyway, one of my colleagues named risotto as her top dish, which got me thinking that it's been ages since I cooked up a batch, and I should probably get back to it. Since steak was already on the menu for dinner, I thought mushrooms and spinach would be the perfect accents to feature. Fortunately, in spite of my lack of practice, the risotto turned out perfect.
