Ingredients

  1. 1 1/2 cupflour
  2. 1 tspground ginger
  3. 1 1/2 tspbaking powder
  4. 1/4 tspsalt ( i use sea salt)
  5. 1 cupgranulated sugar
  6. 1/4 cupvegetable oil
  7. 2eggs
  8. 1grated peel from lemon
  9. 1 cupshredded fresh zucchini
  10. 1 candrained pineapple tidbits

    Preheat oven to 350°F. Lightly grease loaf pan ( I used mini bunt pans this time)

    In large bowl, combine flour, ginger, baking powder, salt and sugar and mix well.

  3. 3

    Add oil, eggs, lemon peel, zucchini and pineapple. Stir to combine. Do not over mix it should be smooth.

    Pour batter into prepared pan. Bake 50-60 min. Turn out bread and cool completly .
