Chicken Picata
Soooo tender and flavorful. Love this recipe.
Cooking Instructions

in a large skillet on medium high heat melt 2 tablespoons of butter and three tablespoons of Olive oil.

season chicken breasts with sea salt and pepper

dredge chicken in flour.

when butter and oil starts Sizzling, add two pieces of chicken to skIllet and brown for three minutes on each side. Then remove and set on a separate plate.

add 2 tablespoons of butter and 2 tablespoons of olive oil to the skillet. When it starts to sizzle add remaInIng seasoned dredged chicken breast to skillet Browning them 3 minutes on each side. When done, move to a plate.

add chicken stock, lemon juice, and capers to the skillet. Bring to a boil.

put all chicken breasts back into skillet and allow to simmer for 5 Minutes.

once again remove chicken breasts from skillet.

add 2 tablespoons of butter to the skillet and whisk vigorously to make the sauce.

Plate the chicken and pour sauce on top.

top with parsley if desired.

My boyfriend loves capers and lemon so I always try to find s solid recipe staple. Note to self- originally I subbed caper juice for the chicken broth which was wayyy too intense.
