Thick carrot and lentil soup

Ingredients

4 servings
  1. 4 mediumcarrots
  2. 1 largeonion
  3. 3 cloveof garlic
  4. 1 tbspveg oil
  5. 1 pintswater or veg stock (approx)
  6. 2 cupred lentils
  7. 1 tspbutter (optional)
  8. 1salt and pepper to taste
  9. 1/4 tspturmeric (optional)
  10. 1/4 tspground coriander (optional)
  11. 1 pinchground cumin (optional)

Cooking Instructions

    Peel and coarsely chop carrots, onion and garlic.

    Add all to pan with oil and fry for 3-4 mins.

    Add stock/water and increase heat to boil.

  4. 4

    Rinse lentils then add to pan.

  5. 5

    Add spices now if including them.

  6. 6

    Boil for 10 mins then simmer for 20-30 mins until lentils and carrots are soft and cooked, stirring often.

    Add butter if you're using it.

  8. 8

    Depending on how thick you like soup, you may need to add more hot water/stock.

    Blend until smooth, (season with salt and pepper if required) and serve.
