I made these quick cookies yesterday evening. Homemade biscuits and cookies are so easy to make and you can mix and match ingredients. I like to mix brown sugar with a little maple syrup for sweetness. I also added a handful of chocolate chips that needed using up.

I love snowball cookies with almonds inside, and so the amount of almonds I added to the cookie gradually escalated. I finally reached a point where the almonds wouldn't fit anymore. The slight sweetness of the powdered sugar and almonds tastes delicious.There are a lot of almonds mixed in so the dough is prone to crumbling while shaping. Squeeze the dough tightly with your fingers. The salt content of the butter differs depending on the brand, so whenever you use salted butter, and also when you think the almonds taste too salty, wipe off the salt with a kitchen towel.
