Chicken and dumplings is one of those dishes that is super simple and easy to make. You can use different variations as time allows. I have used whole chickens that I have cooked all day. I have used just chicken breast or just chicken thigh. I have also used pre-cooked rotisserie chicken. Whatever your time allows it is super quick and easy to make this very hearty and delicious meal for your family .

My boyfriend told me his favorite food growing up was chicken and dumpling soup. Whipped it up with inspiration from other recipes I found online.

Great flavor, and it was fairly easy! I boiled a whole chicken and have tons of stock and chicken left over...Tomorrow nights dinner will be EASY!

This will make enough to feed a army as will most of my recipes but with a family of 7 ya gotta make plenty! They do freeze and can to reheat very well though.
