Pork and Red Bean Soup

I got a pork roast from the store for real cheap and after eating on it for 3 days, I figures I would make soup out of the rest. My 13 year old daughter and I came up with the recipe and she made it all by herself with just a little help putting the veggies and meat into the boiling pot.

Ingredients

  1. 1Pork Roast
  2. 1Bag of Dry Red Beans
  3. 72 ozChicken Both
  4. 36 ozwater
  5. 1Pork Bone
  6. 1 can14 oz. Diced Tomato
  7. 4Large Carrots
  8. 1Yellow Onion
  9. 4Sticks of Celery
  10. 3Large Potatos
  11. 2 cloveGarlic
  12. 3 tbspBacon Bits
  13. 1 tbspRed Pepper Flake
  14. 1 tspChili Power
  15. 1 tspParsley
  16. 1 tspPaprika
  17. 1 tspSage

Cooking Instructions

    Soak red beans in water overnight. Rinse off thoroughly before putting them in pot.

    Put in a large cook pot with chicken broth, water, beans, pork bone. Bring to a boil and let cook as you prepare other ingredients. You may want to turn down heat to just a slight noil.

    Saute carrots onions celery red pepper flake and bacon bits and chopped up garlic. Once sauteed to your liking add to pot.

    Add in chopped up pre cooked pork, which maybe left overs from another dinner, potatoes sliced in round pieces, with or without skin, 14 oz can of Diced Tomato with juices, and all the seasonings listed and whatever else you would like to add. Do be careful not to splash yourself when adding these ingredients.

    Let slow boil for an hour and turn down to a simmer and let cook until ready a good hour or two. You may need to add more broth or water at some point.

    When done pull out pork bone and serve. Enjoy!
