Ingredients

  1. 100 gramsLurpak Light
  2. 90 gramscaster sugar
  3. 2small eggs
  4. 100 gramsself raising flour
  5. 1 tspbaking powder
  6. 1 largeripe banana
  7. 1 tspvanilla extract
  8. 1/2 tspfine sea salt
  9. 3/4 tbspsesame seeds

Cooking Instructions

    preheat oven to 170°F celsius

    melt the butter in a small saucepan over a medium heat

  3. 3

    in a large bowl beat together the eggs, sugar and vanilla extract until the eggs have aerated​ and the sugar is dissolved,

    when the butter has melted leave to cool while you weigh out the other ingredients and mash the banana in a small bowl with a fork

    sieve together the flour, baking powder and salt

  6. 6

    stir in the butter to the eggs while mixing

  7. 7

    add in the mashed banana and mix well

  8. 8

    add in the dry ingredients and fold in until lumps have been broken down

  9. 9

    divide into a muffin tray lined with cases

  10. 10

    sprinkle sesame seeds on top and bake for 20 minutes or until lightly golden

  11. 11

    cool completely and refrigerate​ before eating
