Wanted to make something different, everyone was starving so didn't let it set long enough to be served how it should be. Still came out great tho!

Ingredients

  1. 8Eggs
  2. 1/2 cupMilk
  3. 1/2 cupChopped prosciutto
  4. 2 tbspBasil
  5. 1/4 tspSalt
  6. 1/4 tspPepper
  7. 2 tbspOlive oil
  8. 2 cupCherry tomatoes
  9. 1 cupFrozen cauliflower
  10. 1/2 cupChopped onion
  11. 1/4 cupShredded cheese

Cooking Instructions

    Preheat your broiler. In a medium bowl mix eggs lightly beaten, milk, prosciutto, 1 tablespoons of basil, salt, pepper. Mix up and set a side

    In a large broiler safe skillet heat oil over medium heat. Add tomatoes cook 1-2 minutes stirring once or twice

    Transfer to plate or bowl

    In same skillet cook Cauliflower onion and the other tablespoon of basil. As the cauliflower cooks break into smaller pieces with spatula

    When the cauliflower is cooked pour in egg mixture

  6. 6

    As it starts to set move the sides with a spatula so the top can run Down and cook

  7. 7

    When its cooked enough the top will be a little moist still sprinkle with cheese and put in broiler for 1-3 minutes

    After done add the tomatoes on top let set (I didn't that's y mine is messy) using a pie server serve in pie shaped slices and enjoy!
