I had a few leftover roast vegetables from the night before so I decided to add eggs and bake it. results were empty plates =)
Cooking Instructions

Preheat oven to 180?

Combine eggs, garlic,salt, pepper and chili powder
- 3
Pour a small amount of egg mixture into a shallow casserole type dish just enough to cover the bottom. I used one measuring 10cm by 10cm, 6cm depth.

Layer the potatoes, aubergine and spring onion.

Add half of the chopped bacon

Layer the carrots and both capsicums

Spread the other half of the bacon on top.

Pour over the rest of the egg mix. don't forget to give it a stir first otherwise all your pepper will be in one spot.

Bake in oven for 25-30 minutes

Sprinkle over grated cheese and bake until golden. (10-15 mins)

Remove from oven and let stand for 5-10 minutes.

Cut and serve

I think it's best if you cut the vegetables into small pieces, cook well until softened, then add the pasta and egg. Cover with a lid and cook slowly, but take care not to burn it. I wanted to eat a fluffy frittata. So, I made this by adapting Bill Granger's fluffy scrambled eggs.It's important to fold the eggs. It's really delicious with black pepper! If your oven is large enough then just add the eggs into the mixture and then straight into your oven. If not then do what I do toss the ready made ingredients from the skillet into a oil brushed baking pan and then add the eggs. This is a bit of extra work but at the end it is all worth it. 🙂Who knows maybe someday I will be able to afford a nice size oven, I will keep hoping 🙂 Foodzesty -
