I had a few leftover roast vegetables from the night before so I decided to add eggs and bake it. results were empty plates =)

Ingredients

  1. 2medium roasted potatoes, sliced thin
  2. 4 slicegrilled aubergine (eggplant)
  3. 1med spring onion, sliced
  4. 3 slicestreaky bacon, cut into 2 inch lengths
  5. 1/2roasted red capsicum, sliced into 1 inch strips then into 2-3 inch lengths
  6. 1/2roasted green capsicum, sliced the same as red capsicum
  7. 2carrots, cooked then sliced into 1 inch rounds
  8. 6eggs
  9. 3 clovegarlic, crushed and roughly chopped
  10. 1salt, to taste
  11. 1cracked black pepper to taste
  12. 1/2 pinchchili powder, a little goes a long way with eggs
  13. 1/2 cupgrated cheese

Cooking Instructions

    Preheat oven to 180?

    Combine eggs, garlic,salt, pepper and chili powder

  3. 3

    Pour a small amount of egg mixture into a shallow casserole type dish just enough to cover the bottom. I used one measuring 10cm by 10cm, 6cm depth.

    Layer the potatoes, aubergine and spring onion.

    Add half of the chopped bacon

  6. 6

    Layer the carrots and both capsicums

  7. 7

    Spread the other half of the bacon on top.

  8. 8

    Pour over the rest of the egg mix. don't forget to give it a stir first otherwise all your pepper will be in one spot.

    Bake in oven for 25-30 minutes

    Sprinkle over grated cheese and bake until golden. (10-15 mins)

    Remove from oven and let stand for 5-10 minutes.

    Cut and serve
