Had leftover boiled potatoes from a family dinner ,but I didn't want to throw it away

Ingredients

  1. leftovers
  2. 10boiled potatoes
  3. 2eggs
  4. 1/2onion
  5. 1salt and pepper to taste
  6. 1cooking oil
  7. 1/2Spanish chorizo or spicy sausage

Cooking Instructions

    Mash the potatoes

    Beat the 2 eggs in a separate container

  3. 3

    Put a small amount of oil in a frying pan

  4. 4

    Slice the chorizo as thick or thin as you like to eat it

  5. 5

    Add the chorizo to the pan and cook until the oil goes orange. Remove from the pan.

    Mix the mashed potatoes with the onion, beaten eggs, salt and pepper and chorizo

  7. 7

    Using a spatula or tablespoon place a dollop of the mixture into the pan making sure the oil is hot, fry for 2 mins either side or until golden brown.
