Bean stew with millet

I'm trying to get different ideas for having less meat in my diet. This stew/gruel/goulash has been a life saver, and is very nice because it can be spiced to taste.
Add what you think would taste good in whatever ratio you like...but tell me all about your variations!

Cooking Instructions

Chop up onions and carrots, toss into a hot pot with oil. Cook until soft & fragrant.

Add black beans, great northern beans, and corn, gently fold the ingredients together.

Pour your stock over the mixture.
- 4
Add millet & spices, stir, and cover.
- 5
Let simmer for 30 minutes, or until millet is tender.

I must admit this recipe is really for a beef pie, but the insides where so good, why not just have the insides!! I think it qualifies for stew!! You can cook the first part in a skillet but you do need a Dutch oven to complete it. It is rather fiddly to make but I guarantee you'll be happy with the results. There are multiple variations to this stew ( vegetables, species, bean types) so don't hesitate to make it your own !(*) NOTE: when adding corn starch, ALWAYS mix it with water in a separate bowl first, to ensure proper dissolution into the stew or meal.
