Cooking Instructions

preheat oven to 375°F
- 2
portion salmon fillet into smaller 3 ounce fillets. rinse fish and pat dry.

tear aluminum foil into squares large enough to make tin foil pouches.

pepper each fillet well

next drizzle around 1/2 a tablespoon of maple syrup on top of fillets

fold tin foil to make individual pouches for each fillet.

bake 6-8 minutes at 375
- 8
remove fish from oven and open the tin foil to expose the cooked fillets.

now reset your oven to broil. place salmon back in the oven and cook under broiler for 2-3 minutes. This will glaze the maple syrup to the salmon.

Serve with whatever sides you enjoy having with salmon.

At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight. There was an element missing, so I found some Greek yogurt in the fridge and added dill, but it was lacking. Tried salt and pepper. There was a definite improvement, but not quite there. A touch of horseradish sealed the deal. It made sense to use the, "tomato story," bowl I got at Daiso, a Japanese dollar store near my house. Pretty satisfied with the results overall. I'd put it on a menu.

It must be wild caught. Farm raised doesn't taste nearly as good.
