Mexican chicken chowder

Ingredients

  1. 2 1/2 cupschopped cooked chicken
  2. 1 can (11 oz)whole kernel sweet corn (with sweet peppers if you can find it)
  3. 1 can (10.75 oz)cream of potato or cream of chicken soup
  4. 1 can (4 oz)diced green chiles
  5. 2 tablespoonssnipped fresh cilantro
  6. 1/2 packagetaco seasoning
  7. 1 can (14.5 oz)chicken broth
  8. 1 cupwater
  9. 1 cupfat-free sour cream
  10. 1/2 cupshredded cheddar cheese

Cooking Instructions

    In a large saucepan combine chicken, corn, soup, Chili's, cilantro, taco seasoning, chicken broth and water. Bring to a boil, then reduce heat, cover and simmer 15 minutes. you may keep this warm in a crockpot on low.

    Stir one cup of the hot soup to the fat free sour cream once well mixed return this to the large saucepan and heat

    Sprinkle each serving with some cheese and serve with baked tortilla chips
