Ingredients

  1. 500 gramsMinced beef
  2. 1 mediumBrown onion, chopped
  3. 1Red capsicum, diced
  4. 3 smallcloves garlic, minced
  5. 3 mediumTomatoes, diced
  6. 400 gramsCan red kidney beans, washed and drained
  7. 400 gramsCan condensed tomato soup
  8. 1 tbspGround coriander
  9. 1 tbspGround cumin
  10. 1 tbspSweet paprika
  11. 1 tbspChicken stock powder
  12. 2 tspTomato paste
  13. 1 tbspDried chilli flakes
  14. 1A little vegetable oil for frying
  15. 1Salt and pepper to taste

Cooking Instructions

    Prep all you're veggies. Capsicum, onion and garlic together.

    Tomato, beans, soup, herbs, tomato paste, spices and stock powder together in a separate bowl.

    Now in a large heavy based pot (medium heat), add a little oil and fry capsicum, onion and garlic for around 5 minutes until onion is softened. Remove and set aside.

    Add a little more oil and fry beef mince- chopping as you cook to get rid of lumps. I use a plastic egg flip.

    When browned, return capsicum, onion and garlic- along with all other ingredients. Stir well and simmer for 30 minutes, stirring occasionally- until mixture has turned quite thick.

    Serve with rice, or guacamole, sour cream and corn chips.
    Some corn kernels would be nice through it.
    Some say you shouldn't put tomato in a chilli dish like this- they've obviously never tried it!

Cooked this, got lasy with dicing tomatoes so i subbed in 800g can of diced tomatoes. Had to simmer for near on 1 hour to let it reduce. Very nice and I'd rate heat factor at 5/10
