Back then the school cafeteria would serve this in large aluminum cups.We wouldn't eat it if it was just the vegetables, but with the egg it's delicious.Finely chopping up the vegetables helps them to cook better. My Mom loves her egg sandwiches with the eggs fried crispy. She also love to banana pepper rings on them. I wanted to eat the sandwich and forgot to take a picture. So here it is with a bite out of it.
