Ingredients

  1. 2 lbssunchokes peeled and sliced
  2. Juice of 1/2 lemon
  3. 3 tbspolive oil
  4. 2shallots diced
  5. 3/4 cupwhite wine
  6. 3 1/3 cupbroth
  7. 2/3 cupcream
  8. 1parsnip thinly sliced
  9. 1 cupmushrooms thinly sliced
  10. 3 tbspbutter
  11. to tastesalt and pepper

Cooking Instructions

  1. 1

    Add oil to a pan and cook shallots over low heat until soft

  2. 2

    Add sunchokes cook briefly then add wine

  3. 3

    Reduce slightly, then add broth

  4. 4

    Simmer until sunchoke is soft, then puree

  5. 5

    Add cream to puree

  6. 6

    Heat the butter and fry the parsnip and mushrooms until the edges turn golden brown

  7. 7

    Top soup with parsnip and mushrooms
