Ingredients

6servings
  1. 1kilo gizzards diced
  2. 6Ripe plantain diced and fried
  3. Ripe plum tomatoes and peppers blended to a smooth paste
  4. Handfulcrayfish
  5. cubesSeasoning
  6. Salt
  7. Curry
  8. Sliced onions
  9. Green bell peppers
  10. Carrots Julienned thinly as desired
  11. Vegetable oil for frying
  12. Thyme

Cooking Instructions

  1. 1

    Parboil your gizzards using thyme and curry and set aside
    Fry the diced plantains and set side.

  2. 2

    Blend the tomatoes and crayfish and set aside.

  3. 3

    Julienne your the carrots and green peppers

  4. 4

    Add the blended pepper and crayfish mix. Allow to steam and thicken for some minutes.

  5. 5

    Add the diced gizzards and stir, add the fried plantains and stir to mix.

  6. 6

    Add the carrots and green peppers,mix thoroughly. Drop from heat after some minutes

  7. 7

    Serve alongside white rice, yam, or eat as a side dish. Garnish with fresh carrot and green peppers
