Steps

Parboil your gizzards using thyme and curry and set aside
Fry the diced plantains and set side. - 2
Blend the tomatoes and crayfish and set aside.

Julienne your the carrots and green peppers

Add the blended pepper and crayfish mix. Allow to steam and thicken for some minutes.

Add the diced gizzards and stir, add the fried plantains and stir to mix.

Add the carrots and green peppers,mix thoroughly. Drop from heat after some minutes

Serve alongside white rice, yam, or eat as a side dish. Garnish with fresh carrot and green peppers
