Ingredients

4-6 servings
  1. 2 cupswhite rice
  2. 6seeds of large tomato
  3. 1 handfulfresh pepper
  4. 2tatashe
  5. 1large yellow pepper
  6. 1large green pepper
  7. 1large bulb onions
  8. Meat stock
  9. 1small tin tomato
  10. Olive oil
  11. Knorr cube for seasoning
  12. to tasteSalt

Cooking Instructions

    Wash rice in warm water and sieve

  2. 2

    Blend 5 tomatoes and the fresh pepper, two tatashe with half bulb onions until very smooth. Ensure to take out the seeds in the tatashe.

    Put pot on fire to heat up and pour olive oil. Once oil is hot pour the tin tomato inside and fry for about 30 secs. Turn the blended tomatoes, pepper and onions into it, stir and allow to cook for about 5 minutes.

    Once done, turn of the heat and add the washed rice and stir with a spatula until it spreads evenly on the rice.

    Add one cup of meat stock and three cups of water and stir properly. The cup should be the same one used in measuring the rice.

    Add seasoning and salt to taste. Put back on heat and cover until water is dry.

    Dice the other half onions in thin even slices. Also dice green pepper, yellow pepper in thin slices. Dice one seed of tomato in cube slices. Ensure to take out the seeds of the pepper.

    Once rice is dry add the sliced pepper, onions and tomato and cover the pot for about a minute so the heat from the rice softens it.

    Serve with drinks and protein of your choice.
