Ingredients

  1. cupsRice -3 cups
  2. Fresh tomato
  3. Tatashe
  4. Pepper
  5. Onions
  6. Ginger - 2 bulb freshly chopped and into rings
  7. 2 clovesGarlic -
  8. Tomato paste - 1 tin or satchet
  9. Vegetable oil
  10. Knorr cube -8cubes
  11. tbspSalt -2
  12. Curry
  13. Thyme
  14. Jollof rice spice
  15. Chicken or meat stock

Cooking Instructions

    Pour 4 cups of water into a pot and allow to heat up for 10mins

  2. 2

    Pour 3 cups of rice into boiling water and allow rice to par-boil for 30mins

  3. 3

    Wash and blend fresh tomato,tatashe,pepper,onions,ginger,garlic and bring to a paste

    Steam paste till water evaporates

  5. 5

    Heat up vegetable oil for 5mins,throw in chopped onions,pour in paste from step 2 & 3 and allow to fry on low heat for 25mins

    Pour chicken or beef stock into fried paste and stir,add parboiled rice and allow to cook on low heat for 20mins.

    Add crayfish(optional)

    Taste rice to know if its cooked, add freshly cut onion ring,green peas and any vegetable of your choice

  9. 9

    Note: to get the party jollof rice flavour, allow rice to burn preferably cooked on firewood or coal

  10. 10

    Serve with choice of protein
