this is my first attempt at brown rice and all the information I keep hearing was don't cook so much its very heavy that was how I followed Tosin's recipe and I found myself wishing I made more than 1 cup of rice.

Ingredients

1 serving
  1. 1 cupbrown rice
  2. 2large fresh tomatoes
  3. 1bulb onions
  4. 3fresh pepper
  5. to tastesalt
  6. 1tatashe
  7. 2knorr cube
  8. dashoregano and basil
  9. 1/2cksp veg oil
  10. 1 tspcrush garlic and ginger

Cooking Instructions

    Wash and parboil brown rice and once its almost tender, turn off heat and wash rice and set aside

  2. 2

    Dice onions, tomatoes, pepper and tatashe and set aside, heat up pot, add veg oil and once its hot, add onions and garlic and ginger paste and stir

  3. 3

    Add tomatoes, pepper and tatashe and stir continuously after 8mins add salt, knorr cube, oregano and basil leaf and stir after 2 mins add brown rice

  4. 4

    Stir everything together and allow it cook add chicken stock if you have any available and cook till rice is soft and water is dried up

  5. 5

    I love eggs and since I didn't have chicken at home I fried plan eggs to go with it.
