Spinach Frittata

This tasted way better than it looked.

Ingredients

  1. 2 tablespoonsvegetable oil
  2. 6medium potatoes, diced
  3. 75 gspinach
  4. Halfa clove of garlic
  5. to tasteSalt and pepper
  6. 6eggs
  7. 80 mlmilk
  8. 200 gshredded Cheddar cheese

Cooking Instructions

    Parboil diced potatoes for 8 minutes then drain. In a saucepan, heat the vegetable oil and pour the potatoes in.

    Mix in the spinach, garlic, salt and pepper. Cook until the spinach is wilted.

  3. 3

    Beat together the eggs and milk, pour over the potatoes and spinach. Sprinkle with cheddar cheese.

    Reduce heat, cover and cook until eggs are firm. Mine took a little too long to firm up.
