Simple Yellow Squash

This is the type of squash I grew up on. Here in Florida it's known as yellow crooked-necked squash. Since I was a very young boy I remember waiting and watching my mom make squash in so many ways. It was always heavily caramelized. Even burnt just a bit is delicious.

Ingredients

  1. 1/2small onion
  2. 1/4 cupbacon drippings
  3. 2-1/3 poundsquash
  4. 1-1/2 teaspoonkosher salt
  5. 2 ouncesmoked bacon

Cooking Instructions

    Slice the squash into medallions. Slice the onion thinly.

  2. 2

    Heat a deep pan add the bacon drippings and slice the bacon and add. Cook the bacon for 7 minutes then add the sliced squash and onions. Cover and simmer for 30 minutes. Stir occasionally.

    Let the onion and squash caramelize a lot not burnt but very well done. Serve I hope you enjoy!!
