Easy Yellow Squash with Bacon

Leftovers…More of the yellow squash….this literally took minutes. We had it with rice, country style ribs and cabbage and sausage. Very more-ish.

Ingredients

Several
  1. 8small, young yellow summer squash, washed and sliced
  2. 4 tablespoonsbutter
  3. 1 teaspoonbacon fat(optional)
  4. 4 slicescooked bacon, chopped fine
  5. 1heaping tablespoon minced onion (dried onion is fine)
  6. Salt pepper onion and garlic powder to taste

Cooking Instructions

  1. 1

    Melt butter and bacon fat in large skillet over medium heat/high heat. Add sliced squash and seasonings and the minced onion. Stir and saute until it’s crisp tender, heavy on the tender for me😂

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
