Super savory with just a background hint of sweet. The poblano and garlic adds amazing depth to a classic dish while the squash brings a bit of sweet and amazingly creamy texture without having to overload with cheese... unless you want too which is always good too!

Ingredients

  1. 1 boxGF pasta
  2. 4 CupsRoasted Butternut Squash pureed
  3. 1/4 CupWhite Rice Flour
  4. 1Poblano Pepper chopped
  5. 1 CloveGarlic minced
  6. 2 CupsButter Milk
  7. 1 TspGround Mustard Powder
  8. 1 TspChopped Dehydrated Onion
  9. 1 DashNo-Salt Organic Seasoning (Costco brand)
  10. 1 DashAdobe Seasoning
  11. 3 CupsShredded Cheddar Cheese
  12. 1/4 CupGrated Parmesan Cheese

Cooking Instructions

    Preheat oven to 350°

  2. 2

    In large pan heat 2 tbsp oil and soften the poblano and garlic.

  3. 3

    Whisk in the flour along with the spices. Cook until the raw taste from the flour is gone, about 15 minutes whisking periodically.

    Slowly whisk in the butter milk and allow to thicken slightly.

  5. 5

    Once the mixture is thick enough to coat the back of a spoon start whisking in the squash and 3.5 cups of the cheddar cheese.

    After the cheese and squash are incorporated stir in cooked pasta.

  7. 7

    Pour the mixture into a greased baking dish cover with foil and bake for 20 minutes.

    After 20 minutes remove then top with remaining cheddar and parmesan. Bake uncovered for about 8 minutes, just enough to set and lightly brown the top.

    Allow to cool and dig in!
