I made this simple meal for a dinner party up in the hills over looking Gold Coast with a nice chilled refreshing white and great conversations.
Lime, chilli prawns on mango salad
It’s been pretty hot here in Queensland.
What’s your favorite summer dish??
I made this simple meal for a dinner party up in the hills over looking Gold Coast with a nice chilled refreshing white and great conversations.
Cooking Instructions

Mix all marinate ingredients in bowl and add prawns to absorb flavours. 10mins
- 2
In hot fry pan with some oil grill your prawns till charred and cooked through.
Deglaze pan with remaining marinate juices.
Set aside and rest - 3
Arrange salad on plate with lettuce, mangoes, tomato, onions and mangoes.

Mix on marinate juices with vinegar and oil to make a salad dressing. Taste check for balance. Drizzle over salad

Place prawns on salad, squiggle mayo and serve immediately.

Russian salad is huge in Spain, served as tapas or starter all year round, but particulary popular in home cooking during the hot Summer months. This is a light take on the usual recipe, using prawns instead of tinned tuna and mixing natural yoghurt with the sauce to cut down on mayonnaise and give it a slight tang. Makes a great starter for al fresco dining, also good picnic food too. If you do make it for a picnic, I'd recommend mixing mayo and yoghurt in with the other ingredients just before eating. I haven’t added any sort of dressing to this because I want each ingredient’s taste to stand out, so I am only adding olive oil and a bit of pepper. 🙂 Foodzesty -
