I made this simple meal for a dinner party up in the hills over looking Gold Coast with a nice chilled refreshing white and great conversations.

I made this simple meal for a dinner party up in the hills over looking Gold Coast with a nice chilled refreshing white and great conversations.

Ingredients

  1. 6king prawns green and peeled
  2. For marinate
  3. 1/4 teaspoonchili paste
  4. 1/4 teaspooncrushed garlic
  5. 2limes zest and juice
  6. Few splashes fish sauce
  7. 1 teaspoonsugar
  8. 2 tablespoonchopped coriander
  9. 2 headsbaby cos lettuce washed
  10. 1/4sliced Spanish onion
  11. 4cherry tomatoes cut
  12. 1whole fresh mango peeled and diced
  13. Kewpie mayo
  14. tablespoonwhite wine vinegar
  15. tablespoonvegetable oil

Cooking Instructions

  1. 1

    Mix all marinate ingredients in bowl and add prawns to absorb flavours. 10mins

  2. 2

    In hot fry pan with some oil grill your prawns till charred and cooked through.
    Deglaze pan with remaining marinate juices.
    Set aside and rest

    Arrange salad on plate with lettuce, mangoes, tomato, onions and mangoes.

  4. 4

    Mix on marinate juices with vinegar and oil to make a salad dressing. Taste check for balance. Drizzle over salad

  5. 5

    Place prawns on salad, squiggle mayo and serve immediately.
