Cooking Instructions

Wash and cut the chicken breast into chunks, chop the potatoes into dice, clean and chop carrots into dice, bell peppers into shreds pond the scotch bonnet, garlic and atarugu

In a pot put the chicken chunks, onion, stock cubes, salt and curry and allow to boil once, then add potatoes and carrots to ge soft. Add pounded peppers and garlic then let them cook

Mix the corn starch with water. Let the consistency look like evaporated milk

The very first Japanese curry dish that I had is ebi fry curry from a restaurant in the Philippines called Ippon-Yari and it was love at first bite! I’ve been trying to re-create that dish and now I think I am ready to share it with you. But for this recipe, I am including a similar non-seafood version which are chicken and pork katsu (cutlet), for those who have seafood allergies. Feel free to create the one that you prefer.
