    Add oil to pan and fry yam until slightly golden brown. Remove from oil and keep in a colander to strain excess oil

  2. 2

    Grind little amount of scotch bonnet, pepper and onions and set aside. Add little oil to pan, add onions and fry for a minute then add pepper paste and fry for some few minutes.

    Add spices and seasoning then break eggs and beat in a separate bowl, then pour into pan allow it to sit for a minute and then stir

  4. 4

    Fry for 5minutes then light off gas. Bon appetite ❤️
