Ingredients

  1. 1 poundkibbeh, recipe available in my other recipes
  2. Filling:
  3. 150 gramsground beef
  4. 2onions, finely chopped
  5. 1/4 cuppistachios, crushed
  6. 1little pepper paste (harissa), to taste
  7. Kibbeh spices
  8. Yogurt sauce:
  9. 1 kilogramyogurt
  10. 3 tablespoonscornstarch
  11. 1/2 cupwater
  12. Pinchdried mint, to taste
  13. Salt
  14. For garnish:
  15. 1 clovegarlic
  16. 1 tablespoonghee
  17. 1 teaspoondried mint
  18. 3 cupsoil, for frying

Cooking Instructions

    Prepare the yogurt sauce by mixing its ingredients. Then strain and place over medium heat. Stir continuously until it boils.

    Prepare the filling by sautéing the onions with salt. Add the ground beef and mix. Cook until browned.

    Add the spices and pistachios, then remove from heat.

    Shape the kibbeh into small discs, stuff with an appropriate amount of filling, and either bake in the oven or deep fry in oil.

    When serving, mix the yogurt sauce with the kibbeh. Garnish with the mint and nuts, as desired.
