A winter recipe that is very delicious and nutritious, famous in Lebanon and the Levant.
Cooking Instructions

Put the oil in a pot over the heat, add the onions cut into medium cubes and sauté until they soften. Then add the ground beef and stir until it changes color and cooks. Now add salt and spices, stir, and remove from heat. Let it cool completely. If desired, you can add pine nuts.

Shape the kibbeh balls as shown in the picture 👇🏻

Now stuff the kibbeh balls with the ground beef filling and seal them well.

There are two ways to cook kibbeh in yogurt: you can fry the kibbeh balls in hot oil and place them on paper towels to remove excess oil, or you can skip frying and place them directly in the yogurt. I prefer frying the balls.

Now start preparing the yogurt. Pour the 4.4 lbs of yogurt into a Tefal pot and dissolve 2 tablespoons of cornstarch in it while cold.

Place it over low heat and stir continuously to prevent the yogurt from sticking or clumping.

Rinse 1/2 cup of rice that has been soaked for half an hour and add it to the yogurt.

Don't forget to stir constantly.

Now, in a small pan, put a little oil and fry the crushed garlic and chopped fresh cilantro.

Check the rice, and when it is well cooked, add the fried kibbeh balls, cilantro, and garlic. Let them simmer for 15 to 20 minutes.

Turn off the heat and serve the kibbeh and yogurt in large dishes.
