Creamy Cajun Red Beans

Ingredients

  1. Olive oil
  2. 1 lbdry small red beans (not kidney)
  3. 1 lbsmoked sausage
  4. 1 lbsmoked ham
  5. 2green bell peppers
  6. 1large onion
  7. 4 stalkscelery
  8. 2 clovesgarlic
  9. 1/2 stickbutter
  10. 1chicken bouillon cube
  11. Water
  12. 1Tblsp garlic powder
  13. 1Tblsp Cajun seasoning
  14. 1 tspthyme
  15. 4bay leaves
  16. fresh parsely
  17. Few dashes of Worcestershire
  18. Pinchsugar
  19. Cooked rice (your choice)
  20. Green onions chopped

Cooking Instructions

    Sort out and soak the red beans the night before

  2. 2

    Cut up all your meats and veggies and start browning the sausage in a pot with just a bit of olive oil

  3. 3

    Add the peppers, celery, onion and garlic on top of the sausage and stir to combine. Next add the butter and stir till melted

  4. 4

    Add the ham and keep stirring

  5. 5

    Add the red beans and enough water just to cover everything and bring to a boil

  6. 6

    Then add the garlic powder, Cajun seasoning, thyme, 4 bay leaves, pinch of sugar and Worcestershire

  7. 7

    After an hour add fresh parsely

  8. 8

    Cook for 2 and 1/2 to 3 hours on LO barely a simmer stirring occasionally and mashing some beans on the side of the pot for more creaminess (do this towards the end) It makes a paste

    Serve over rice and garnish with the green onions on top 😋😋😋 this time I used yellow rice but use any kind you like ENJOY 😊
