Cooking Instructions

Add the chopped onion, potato, carrot and celery to a saucepan, pour in the hot stock, bring to a boil then turn down and simmer for 30 minutes

Puree smooth, season well with salt and pepper and serve with a swirl of coconut cream on top

The supermarkets here always have the 5 main pre-packed vegetables going very cheap the week everyone is buying their Christmas dinner accompaniments. I got sprouts, parsnips, carrots, potatoes and onions for 15p a bag at Tesco, apparently Asdas were even cheaper! A lot of people dislike sprouts but we eat them all year round. Some people like to pair them with bacon or chestnuts at Christmas and you could certainly use ham stock if you like in this if you want to tone the sprout flavour down. I opt for half and half chicken / vegetable stock and you can add extra water depending on how thick you prefer your soup.
