Ingredients

  1. 1carrot, sliced
  2. 1large white potato, peeled & chopped
  3. 1onion, chopped
  4. 4 stickscelery, trimmed and chopped
  5. 1000 mlvegetable stock
  6. to tastesalt & pepper
  7. 2 tbspcoconut cream

Cooking Instructions

    Add the chopped onion, potato, carrot and celery to a saucepan, pour in the hot stock, bring to a boil then turn down and simmer for 30 minutes

    Puree smooth, season well with salt and pepper and serve with a swirl of coconut cream on top
