In a large mixing bowl, whisk together the flour, baking powder, baking soda, and pinch of salt set aside

In a separate bowl, whisk together the oil, eggs, sugar, and vanilla extract until fully combined. Add the grated carrots and warm milk into the wet ingredients and mix until well combined.

Pour the wet ingredients into the dry ingredients and mix with a whisk or rubber spatula until just combined, making sure not to over mix the batter.

Bake for 20 to 25 mins

Carrot cake was my mother’s favorite cake. I can remember being four years old and peeling carrots and licking the batter off of the spoon. My father always had something to say about the raw eggs, but my mother didn’t care. Haha, I survived!! Anyway, I got this lamb mold and I wanted to try it out, so I made a carrot cake.
