Yam Piccata

Piccata is a method of preparing food. The veggies or meat is sliced, possibly butterflied and pounded as well, coated with something such as egg, flour, crumbs, sautéed and served in a sauce, which could be made from pan drippings.

Cooking Instructions

Peel and cut your yams into a reasonable equal sizes and height (As shown at the image uploaded. Because you are going to deep fry)....Remember, YOUR YAMS SHOULD HAVE A FLAT TOP AND BOTTOM SHAPE for veggies topping.

After washing, wash your yams well and transfer to a pot. Then add water to the level of the yam and add your sugar and salt, then cover and bring to boil until 80% cooked.

While it boils, slice your veggies and set aside.

In a bowl or plate, pour your ALL PURPOSE FLOUR and add pinches of salt and set aside. Then in another bowl, break in your raw eggs and add you add your sliced veggies and your spices except SUGAR(sugar is added alone while boiling the yam).

Note:- the spices and veggies is for the raw eggs broken into the 2nd bowl, and not doing same to the flour. Why because, your meal outcome would be too spicy.

BACK TO OUT POT OF YAM.... When it done as prescribed, pick them out into a tray, with a cooking thong or a fork and allow to cool down for like 20-30mins.

When its cool...You pick them one after the other and coat very well with the flour and do that to all.

Note:- You coat in the egg mixture immediately only when you are ready to fry. Do not coat in egg mixture and keep.....SECONDLY, the level of oil you would be using should be as the same level of the yam length because you are deep frying, not flipping....The veggies are not meant to disarrange on the topping, that's why you need to obtain the prescribed level

BACK TO WHERE WE WERE... Set your oil to heat while you coat your yam with the egg mixture and on the flat top, you put some veggies from the egg mixtures on it and transfer to the heated oil...

Note:- you place the yam with the veggie toppings facing up..And you fry each for 2mins or less than..

Do the same to all and use a cooking thong to pick them out (You would love the colors)..

Put in a sieve for some minutes and its ready to be served...ENJOY!!!!!
