White rice and chicken stew with plantain!

Cooking Instructions

Cut, wash and boil the chicken with seasoning cubes, salt, onions, curry powder and thyme. When cooked, remove the chicken and drain in a basket to remove excess stock, set the stock aside for later use.

Parboil rice, wash, drain, put in a pot, add some salt, add enough water that can cook it, then cook until soft. Set aside!

Pour vegetable oil in a pot, add the blended tomatoes and pepper, add chopped onions, stir until it is well fried, add some salt and seasoning cubes to taste, add some curry powder and thyme, add the boiled chicken, stir together, then add the chicken stock, stir together to fully combine all the ingredients. Cover and allow to boil for few minutes. Turn off heat.

Put vegetable oil in a frying pan, peel and cut your plantain, add some salt to taste, then fry in hot vegetable oil until golden brown and well fried.

Breakfast is served! Serve the white rice with chicken stew and plantain together. Enjoy!
