    Pour the sugar into a non stick pot, dissolve the sugar slowly by stirring with a spoon over a low heat.

    Keep stirring until no sugar granules left, and sugar turns to a dark color.

    Add water, tamarind, lemon grass and mint leaves. Blend the ginger and cloves, add it to the mixture. Let them boil for about 10mins.

    Let it cool completely, sift the mixture and add ice.
