Soak njahi overnight to soften and remove any gas

Boil njahi until cooked

Smash njahi while still hot

Boil everything apart from onions and cooking oil
- 5
Smash again until well blended
- 6
On a separate sufuria cook the onions until golden brown
- 7
Pour your cooked onions to mukimo and continue blending
- 8
Serve with steamed cabbage

Concoction porridge
I'm sure you're wondering what kinda name is that... Well... It is what it is. I made this concoction because 1. I was bored 2. I had plantain that was too soft (I don't like my dodo soft and sogy so I couldn't fry and it wasn't extremely soft enough to make mosa(I actually prefer banana mosa to plantain mosa)).This porridge was squishy, sweet and spicy. I really can't explain how it tasted or how I felt after eating it with ice cold fanta to wash it down but I hope you can create the feeling yourself after reading this.

Plantain Mosa
Plantain belongs to the class of carbohydrates food nutrients and rich in other nutritional values so throwing them away when overripe and very very soft is a NO! NO! but a time to experiment in the kitchen. I had these very overripe plantain and banana in the fridge rather than throwing them away I peeled and mashed them in a bowl added a few ingredient and produced a homemade party snacks from it.....lol #Cookeveryparts
