Danwake with stir-fry salad

This is one of my favorite dishes, i can eat it non stop.

Dan wake has become one of the northern Nigerian(hausa) food staple, in fact it has made its way to other part of the country too.Even during those days when i don't have an appetite for eating, it always come to the rescue.
Danwake is eaten by sprinkling dome salt or seasoning cubes, a drizzle of oil , some salad and off course yaji mixed all together. For my recipe today i decided to make it more interesting, healthier and appetizing by serving it with some amazing hearty stir fry salad.
Cooking Instructions

For the danwake ; sift flour in a bowl, add kuka and mix

Make a well pour in the potash water and mix well to for a sticky batter

Set aside. Bring water to a boil, scoop and drop the ball in boiling water. Alternately keep dipping your hands or spoon in water so as the batter will not stick. when cooked remove from hot water and place in another bowl with cold water(water should be at room temperature).

Next is to make the stir fry. Heat oil in a pan and saute green chilies and garlic.

Add onion and fry, add the green and red pepper, the carrots and mix.

Cook and season to taste with salt and seasoning cubes, and a drop of soy sauce. Remove from heat, add parsley and mix

Allow to cool for few seconds, then add the cabbage and lettuce, mix slowly, adjust taste and serve.

Plate nicely and serve by drizzle some olive oil (note salad contains oil too), salt & yaji. Enjoy
