Parsnip and Kale Soup with Yogurt Sauce

I like to have some warm soup as a dinner in cold, long winter days. Parsnip and kale are seasonal vegetables of February. They would keep your immune system up and protect your health. If you have leftover boiled rice you can add the soup before blending or if you have leftover breads, you can grill and sprinkle on top of your soup when you serve it. Enjoy 💕

Ingredients

4 people
  1. 2parsnips (finely chopped)
  2. 1 bunchkale (chopped)
  3. 1 tbspflour
  4. 1/2butter
  5. 2 tbspyogurt or double cream
  6. 1big onion (chopped)
  7. 2 clovesgarlic
  8. 1potato (chopped)
  9. Salt and pepper

Cooking Instructions

  1. 1

    Melt the butter and add flour. Fry them together. Add onion and garlic. Fry them.

    Add other vegetables and keep frying. Add boiling water till the water getting on top of vegetables. Add salt and pepper and cook them in low heat till vegetables getting soft.

    Replace your soup from the hob and blend it well. Place in a bowl your soup and add some yogurt or cream on top to serve. Enjoy! 🎈❤
