I first came across this recipe on Saturday Kitchen and of course had to tweak and make my own, I served this with prawns and rice and it was a great for a warm evening. But I could also see this being great with warm pork belly and boa buns. feel free to make your own and I would love to see your cook snaps. #mycookbook #cooksnap

Ingredients

2 servings
  1. cucumber
  2. 1 tspsea salt flakes
  3. 1garlic clove, crushed
  4. 1 tspgranulated sugar
  5. 2 tbsprice vinegar
  6. 1/4 tspground black pepper
  7. 1 tbspsoy sauce
  8. 2 tbspScreaming Chimp Pineapple

Cooking Instructions

    Slice the cucumber length ways

    Scoop out the seeds with a spoon

  3. 3

    Place the cucumber on a board and place a flat metal implement, such as a spatula, on top. Using the palm of your hand, smack until the cucumber splits and breaks.

    Chop into bite-sized pieces and transfer to a bowl. Add the salt, toss and set aside for 30 minutes.

  5. 5

    Rinse and drain the cucumber

  6. 6

    Mix the other ingredients

  7. 7

    Add to the cucumber and enjoy
