I often hear about people who are not keen on tomato based sauces for pasta. Italian cuisine is full of variety and there are many recipes without tomato. Garganelli with asparagus and pancetta

Ingredients

4 servings
  1. 400 gGarganelli pasta
  2. 150 gpancetta
  3. 4-5asparagus tips
  4. Chopped shallot
  5. Small glass of white wine
  6. Good amount of olive oil
  7. Salt to taste

Cooking Instructions

    Bring a pot of salted water to the boil. Fresh Garganelli only takes a few minutes to cook, so don't cook it yet. Chop all your ingredients. Heat oil in a pan and soften the onions. Now add pancetta and cook for about 3-4 mins. Add asparagus and cook for another 3-4 mins.

    Now add the pasta and cook according to instructions. Add wine to the sauce and let it evaporate. Add a ladle of pasta cooking water to the sauce. Drain pasta al dente and add to sauce. Mix well and serve
