Ingredients

6 servings
  1. 3 tbspolive oil
  2. 8 ozham or pancetta
  3. 15 ozCannellini beans
  4. 16 ozpeeled crushed tomatoes
  5. 2 cupwater
  6. 1/2 cupred wine
  7. 1medium onion, chopped
  8. 3celery stalks, chopped
  9. 2bay leaves
  10. 1salt & pepper, to taste
  11. 8 ozDitallini pasta

Cooking Instructions

    In a soup pot, sautee onions and ham in olive oil until onions and ham are translucent and a light golden color.

    Add celery and continue sauteing a couple minutes longer. Add beans and crushed tomatoes plus two cups of water, wine, bay leaves, salt and pepper.

    Bring to a boil then lower heat and cover and simmer for 45 minutes.

    Cook pasta separately, adding just before soup is served.
