Ingredients

3 servings
  • 1big bunch of parsley
  • Handfulmint leaves
  • 2Medium firm tomatoes
  • 2spring onions
  • Handfulextra fine bulgur wheat soaked in water
  • 1big lemon juice
  • 1/3 cupgood quality olive oil
  • 1 tablespoonpomegranate molasses (otpional, i didn’t add it)
  • Salt
  • What to eat it with (otpional)
  • Lettuce/iceberg/cabbage leaves to scoop the tabbouleh in

Steps

  1. 1

    Here are all the ingredients you will need

    Rinse your vegetables and soak the bulgur wheat in water for around 10 minutes until it’s soft, then drain

  3. 3

    Finely chop everything. You can use a food processor to chop the parsley leaves if that’s easier for you BUT DO NOT OVERDO IT or you’ll end up with a tabbouleh smoothie 🍹

    Place al the vegetables in one deep bowl

    (I chopped all the parts of the green onion but only a small part of the parsley stems)

  5. 5

    Add the lemon juice, olive oil, salt and bulgur (and pomegranate molasses if used) over the chopped vegetables and gently toss to combine.
