Cooking Instructions
- 1
Prep & measure all ingredients.
In a blender, or food processor, pulse rice with chicken broth into smaller bits. Note: Blending speeds up the cooking process as blended rice cook faster.
- 2
Transfer rice mixture into a pot. Add your protein. We use cooked chicken, shredded into tiny bits. Stir and bring to a rolling boil. Leave boiling for 5 minutes. Turn the heat down to low and continue to simmer and stir occasionally. Keep cooking until it turns starchy and reaches your preferred consistency.
- 3
Season with chicken seasoning powder (or chicken bouillon) and white pepper powder. Taste and adjust seasonings accordingly. If you use raw diced chicken, check your protein making sure it's cooked through. Next, add beaten eggs, stir and cook for another minute or two then remove from the heat and serve warm, as it is or with your preferred toppings.
- 4
Note : To prepare chicken broth - cook chicken carcass with enough water in a soup pot. Add few slices of ginger, 1 brown onion, roughly chopped, a tsp of crush peppercorns for the heat, vegetables of your choice (carrot, celery white radish/daikon) and 1 chicken cube or use chicken seasoning powder or chicken bouillon. Bring to a boil then simmer for at least one & half our or more for a richer taste. Once done, strain & discard the solid.

Turmeric Arroz Caldo - Chicken Congee | Filipino rice porridge Turmeric Arroz Caldo - Chicken Congee | Filipino rice porridge
Turmeric, the miracle spice, is so "in" these days because of its health benefits. Since turmeric is already commonly added to steamed rice, why not add it to a congee (or lugaw in Filipino, or Arroz Caldo, or porridge)! The twist in this Chicken Arroz Caldo or lugaw recipe, aside from the Turmeric addition, is that I've pushed the "healthy" factor by using brown and red rice instead of white or sticky rice. Sounds good, hey? :)This dish is perfect for cold nights and rainy days. 😊 SpottedByD -

I love the Chinese congee served in Chinatown. It's healthy and warms your body, too. I recommend serving it with walnuts.Chinese congee uses about 4 to 5 times more water than Japanese congee.I used 3 cups of water in this recipe, but you can add more water to adjust it to your desired consistency.Once you make it, you'll be able to memorize the recipe. You just need 1 bowl of rice, 3 cups of water, then 1 teaspoon each of salt, Chinese chicken stock granules, and sesame oil. It's so simple. Recipe by Orihime mama cookpad.japan -

Bitter Melon is nutritious, but has a strong flavor. It's the main reason why I believe mixing it with this specific comfort food dish COULD help a person overcome a cold.Take note that I am using a YumAsia brand rice cooker that has a porridge option. So how I am making this dish will be different from how you will be able to make it.I'm honestly posting this so that I remember how I made it when I get sick again~ Alana E. -

Vietnamese love their free run chicken! Contrary to the regular farm raised chicken, which are usually tender and fatty, the free run chickens are more firm, with less fat, and is tastier in flavor. With that in mind, to make this as traditional and authentic as can be, use a free run rooster chicken! Quoc Nguyen | Chef Q
