Grate boiled potatoes,

Heat oil in a kadai, add cumin seeds, asafoetida, chopped green chillies and saute it well

Add grated carrot, chopped spring onion, salt and saute it well.

When it cook well, add grated potatoes. Then add sugar, dry mango powder, dry ginger powder, garam masala, chopped green coriander and mix it well

Wet udad papad in a water, dry with cotton cloth.

Make roll from stuffing, put on udad papad, cover both side, make papad roll.

Heat oil for frying in a kadai, fry all papad roll on medium high flame.

Fry all papad roll. Serve hot crispy potato spring onion papad roll with tomato ketchup.
